I'm going to share one of my most favorite "side dishes". I say this in quotations because I'm not sure if it's really a side dish per say. Anywho! It's a balsamic vinegar and tomato mix, and it is so yummy! You will need the following:
I didn't use onion in mine this time because I didn't have any on hand, and any onion would work, but I like green onions best for this. Cut up your tomatoes to your liking and dump them into a bowl. (If you have onions this would be a good time to chop them and toss them in too) Sprinkle on desired amount of zesty Italian seasoning mix. I use 1/4-1/2 of the packet depending on how much I'm making. Drizzle on the balsamic vinegar until the tomatoes are lightly coated. Stir all ingredients to insure the seasoning gets mixed in. I like to let it marinate and chill for a few hours before eating. It also makes an awesome dressing topping for salad! Enjoy! If you try this recipe, come back and let me know how you liked it and how you used it. :) I wish I had taken a picture of what this frame looked like before I painted it :( I go to thrift stores and yard sales and look for things I can reuse to paint or do my mosaics on (more on mosaics in later post).
